Strawberry Muffins – 2 Recipes

My younger daughter finished school last week and doesn’t start her real camp for a few weeks so we took 1 day last week to go strawberry picking. The funny thing is the day before we went she kept saying she didn’t want to go. But of course we went with one of her best friend’s and they had fun! We were lucky – the weather was beautiful and it was “peak” time for the strawberries that week. So, what does one do with all those strawberries? Make muffins of course!¬†



We picked enough that we had plenty to eat AND make 2 batches of muffins. I wasn’t originally planning to make 2 different batches but after making the first batch and realizing how many strawberries were still left and how long they last, i.e. not very long, I decided to pick a different recipe and make MORE muffins the next day. The good news is that both recipes are decently healthy, and the 2nd recipe doesn’t even have flour!

Also, I was feeling kind of relaxed and decided to let my daughter¬†wield a small santuko knife to cut up the strawberries for me. This is SO not my usual comfort zone but felt she was up to the task this day and I was so proud of what a good job she did! Sadly, forgot to take a picture of her “chef” skills. Next time…..

So, the first batch we made was called Skinny Strawberry Chocolate Chip Muffins. This was the winner in my house between the 2 batches. I made some with the chocolate chips and some without (my younger daughter doesn’t love chocolate and my older daughter considers it a food group!). The recipe says it it only makes 10 muffins (or 11 for me) but other then that, I liked it.


The other recipe is called Strawberry Shortcake Muffins but I’d called it Oatmeal Strawberry Muffins. This is the recipe without flour but it does have oats. My family didn’t care for it much. I wasn’t clear why but it could have a lot to do with the oats but my husband felt they were mushier and he liked that less.


The verdict overall was to go with the first recipe. Hope this helps with some ideas if you or your family do some strawberry picking soon.
